    I adore downtown Homewood, the shops and restaurants are fabulous, and there are so many cool choices to explore, plus everything is all together on one main street. Below are my families favorite and best local food and restaurants in soho.

    These rich chocolately brownies are just 2 ingredi These rich chocolately brownies are just 2 ingredients and don't require any flour or butter. So 💯 gluten and dairy free.  This is an easy shortcut brownie recipe and taste devine

Backstory: My son found her recipe and made it last night for Spanish class.  He had to record home self making them and explain what he was doing in Spanish.  We all fought over them when he finished baking them.

INGREDIENTS⬇️
4 large eggs
10 oz semisweet chocolate chips
INSTRUCTIONS⬇️
Preheat oven to 350°F. Spray an 8 x 8 inch baking pan with oil.
In the bowl, add eggs and beat eggs with mixer until frothy. Increase mixing speed to highest setting and continue to beat eggs for about 8 minutes. They will become a very pale yellow and mixture triples in volume and becomes thick. See photo. 
While your eggs are beating, melt your chocolate in the microwave or on the stove. If using microwave, melt at 30 second intervals, stirring in between, until chocolate is completely melted and smooth.
Let chocolate cool slightly so it's no longer too hot to touch. 
Add in 1/3 of the egg mixture. Fold in the egg mixture using a spatula until egg is completely incorporated. Repeat with another 1/3 and then remaining 1/3. Towards the end, your chocolate may start getting a little stiff. That is okay. Break up any chocolate clumps using your spatula.
Pour batter into prepared pan. Bake for about 25-30 minutes or until a toothpick inserted comes out clean. The surface of the brownies should also be firm. Let brownies cool before cutting and serving.

    Mexican Street Skillet Corn 🌽 is loaded with fl Mexican Street Skillet Corn 🌽 is loaded with flavor and a perfect dish for summer and a great way to get some whole food carbs on those regular macro days.

🌽Sweet summer corn (fresh or frozen) is toasted/charred it in a skillet and topped with a bit of mayo, green onion, jalapeno (optional) cilantro, crumbled cotija cheese and chili powder. Serve as a side dish, a dip  or top chicken, fish, shrimp, or tacos.
Ingredients
▢ 6 ears fresh corn husks removed and kernels cut off cob (about 4-5 cups) *
▢ 1 Tbsp vegetable oil
▢ 2 Tbsp mayonnaise
▢ ¼ cup green onions thinly sliced
▢ 1 jalapeno pepper seeded and stemmed, finely chopped (optional)
▢ ½ cup fresh cilantro leaves finely chopped
▢ juice of one medium lime
▢ 2 ounces cotija cheese or queso fresco, or feta
▢ 1 tsp chili powder more or less to taste
▢ salt to taste
Instructions
-Heat oil in a large skillet over medium high heat. 
-Add corn and cook without stirring until corn begins to char (about 2-3 minutes). -Toss corn and let cook for an additional 2-3 minutes (without stirring). 
-Give the corn one final toss and repeat cooking for additional 2-3 minutes until corn is charred on all sides. -Turn off heat.
-Add remaining ingredients and stir to incorporate. Add salt to taste. 
-Serve immediately.
Notes: 
* If fresh corn is not available you can use frozen (thawed) or canned corn. (4-5 cups)

- GF spaghetti or any pasta of choice. I love @eatbanza 
- 1/2 avocado
- 1/2 lemon, juiced
- micro greens or leafy green of choice
- olive oil 
- S&P to taste
Directions:
- cook pasta according to instructions 
- To make the sauce, mash half of an avocado, add lemon juice, sea salt, and olive oil and mix into the pasta 
- Sprinkle with vegan parmesan (optional) and top with micro greens

It is gluten free, dairy free, whole 30, paleo and keto!

Recipe 👇
1 lb. shrimp thawed drained and patted dry with paper towel
1 tablespoon olive oil
2 avocados peeled and sliced
Salt and pepper to taste
¼ red onion sliced
2 cups shredded lettuce
1 tablespoon fresh chopped cilantro
Dressing
3 tablespoons extra-virgin olive oil
3 tablespoons fresh-squeezed lime juice
1 teaspoon ground cumin
1/4 teaspoon sea salt
1/4 teaspoon Fresh cracked pepper
INSTRUCTIONS
To steam the shrimp, bring a large pot of water to a boil. Add the thawed shrimp to a steamer basket or mesh strainer and steam for 5-6 minutes until they turn opaque and cooked through
To make the dressing, use a bowl large enough to hold all the ingredients. Whisk together the olive oil, lime juice, cumin, salt and pepper
Transfer the cooked shrimp on top of the dressing. Add the red onions and gently combine all the ingredients with the dressing in the bowl. Spoon mixture over the shredded lettuce and add the sliced avocados.
Garnish with cilantro and serve at room temperature
